Chiverton pork comes from Cowra, NSW where they also produce the best lamb in Australia. Chiverton pigs are free range and hormone free, and cared for by experienced producers to ensure that their pork is some of the best in the country. Hot Canary rolls your roast and scores the skin to perfection.

Your smashed Robertson potatoes and assorted roast veggies can be cooked at 180 degrees Celcius. 

- Veggies will take approximatley 50-60 minutes

- Potatoes will take approximately 35-40 minutes

To cook your Chiverton pork loin roast, oil and salt the skin using the condiments provided (make sure you massage the salt into the score marks). There is not such thing as too much salt, the skin will only absorb to much and the rest can be brushed off afterwards.

Cook your roast on 220 degrees Celcius for 30 minutes, then reduce the oven temperature to 180 degrees Celcius for the time recommended in your included Butcher's Notes.

Hot Canary recommends heating the gravy in a pot for a better end product.

- Bring gravy to the boil while stirring occasionally, reduce to a simmer immediately 

- Add salt and pepper to taste

- Mix in one teaspoon of butter right before serving

- Enjoy!!

With vegetables sourced from Highlands Fresh market in Mittagong, we cut and portion pumpkin, parsnip, carrot, Spanish onion and desiree potatoes to make the perfect mix of roast veg! Then we toss them through our very own house-made herb and garlic oil, topping with a mix of French Provincial herbs.
